The Finca El Clot, straight from the land to our restaurants without leaving Villajoyosa
For 20 years, the Hotel Servigroup Montiboli has received the freshest raw material every day, for its cuisine, from the Finca El Clot (our vegetable farm). A very special place where we grow our fruits and vegetables close to the sea in the heart of Villajoyosa, just a few meters from the hotel.
Thanks to Servigroup's commitment to zero-kilometre products, all produce is grown on our own land, following traditional methods to preserve the flavour and health properties, Finca El Clot has become an essential supply source for the hotels in the chain and above all for our Hotel Montiboli, whose gastronomic offer, according to the season, varies constantly to always show off the best flavours possible.

A traditional allotment one step away from the Mediterranean
This special farmland extends for over more than 10 hectares that include 14,000 m2 of greenhouses, in which they work following the principles of organic agriculture and collecting the best seasonal products at all times.
Originally, the vegetable farm was exclusively dedicated to the production of oranges and lemons, but today an extensive and careful selection of top-quality products are grown, among which are, depending on the time of year, pumpkin, cabbage, cauliflower, broccoli, oak leaf lettuce, tangerine, watermelon, melon, bell pepper, cucumber or basil.

In the extraordinary greenhouses built on the farm, high quality tomatoes began to be grown, with that true tomato flavour that is sometimes so difficult to find today. Later crops of aubergines and other rich vegetables were added to set the rhythm of the kitchens of the Hotel Montiboli. It is really a pleasure to know that the products that you are tasting in our menus have arrived at the hotel that very same day.
In the kitchen of the Emperador Restaurant, our chef Jean Marc Sanz waits every morning for the arrival from the vegetable farm, to be shipped, to add to the special menu choices, getting the most out of each ingredient. What a pleasure!

The best organic product is grown following the decades long traditions of Villajoyosa
Gaspar and Toñi enjoy this work with enormous affection and dedication, treasuring a long history on the farm based on their experience, taste for the land and knowledge of the traditional techniques known today as organic farming. Jobs where there is no place for pesticides or sulfates and natural compost is key to achieving a great result.
Every year Gaspar receives visits from schoolchildren and associations from Villajoyosa who come to Finca El Clot to learn about the details of organic farming and its importance for the food chain.
Finca El Clot also has its own olive trees for the production of extra virgin olive oil that dresses our salads and garnishes our dishes with that unmistakable grace of the Mediterranean diet. Freshly picked from the trees using the ancestral rake, the El Clot olives travel just a few kilometres until they reach the oil mill where they become the liquid gold of our kitchen.

The winner of the Villayosa Pumpkin Contest is grown at Finca El Clot
Every July, Finca El Clot presents one of its best pieces for a competition to compete among a large number of pumpkins arriving from all over the region in search of the best specimen of the year. A contest that is held annually in the popular Plaza del Practicante Miguel Ortuño, and which is organized by the Villajoyosa Town Councild.

The main purpose of the contest is the exaltation of the local type of Pumpkin, a very particular autochthonous variety due to its rough and grainy skin. The contest has a panel made up of 8 experts, all of them highly experienced and revered in the field of regional agriculture, including several members of the Municipal Agrarian Council.
Its characteristic green colour, its abundance of meat and its perfect morphological characteristics make each year our pumpkin the ideal ingredient for the most traditional of Vileros stews, “la pebrereta”, and therefore, becoming the winner of the contest...

In short, the cuisine of the Hotel Montiboli has its deepest roots in the tradition of Villajoyosa gastronomy. For this, together with the best products and seafood, that we buy every day at the municipal market, we love being the ones who grow the vegetables or fruits that our customers enjoy.
